Wheat free, Dairy Free and Refined Sugar Free Fruit Bread

This is a delicious recipe from the Merry Maker Sisters (www.merrymakersisters.com) for fruit bread that is free from dairy, wheat and refined sugar. It is absolutely delicious, packed with nutrients and will satisfy even the fussiest eater. It's also really quick and easy to make. Once baked I like to slice it and then freeze the loaf. I just pop a piece into the toaster to defrost it and have delicious fruit toast!
2 cups almonds
¼ cup chia seeds
¼ cup coconut flour
2 teaspoons cinnamon
¼ teaspoon baking powder
¼ cup coconut oil
¼ cup honey
1 tablespoon apple cider vinegar
½ cup sulphate free dried apricots
½ cup sultanas
Preheat your oven to 180c or 350f and line a loaf tin with baking paper. In a blender, whiz the almonds, chia seeds, coconut oil, cinnamon and baking powder until smooth. Add the coconut oil, honey, eggs and vinegar and whiz until combined. Transfer the mixture to a bowl and gently mix in the apricots and sultanas until combined. Pour the mixture into the prepared tin and bake for around 45-55 minutes.
