Bircher Muesli

This is a single serve, multiply for required serves.

 

½ cup oats or quinoa flakes

Fruit juice or water for soaking

¼ cup grated apple

2 Tablespoons slivered almonds

1 Tablespoon Pepitas

1 Tablespoon Sunflower Seeds

1 Tablespoon dried fruit (sultanas, currants or chopped dried apricot)

Dollop of Greek yoghurt

 

The night before soak the oats or quinoa flakes in fruit juice or water until covered. Cover and refrigerate overnight. In the morning add the grated apple, almonds, pepitas, sunflower seeds and dried fruit and mix until combined. Add the yoghurt on top and serve. If dairy free, omit the yoghurt or serve with coconut yoghurt.

 

The great thing about bircher muesli is that you can add pretty much anything you like in the morning depending on what you like. Oats are great when they are soaked as it breaks down the enzymes that our body finds difficult to digest.
